Sweet Potato Souffle


4 large sweet potatoes
2 eggs
3/4 cup maple syrup
1 8-ounce can crushed pineapple
1/4 cup milk
1 teaspoon vanilla
3/4 stick (6 tablespoons) of butter
2 cups miniature marshmallows


1. Ask a parent to boil the sweet potatoes and remove the skins.
2. Mash potatoes while still warm with an electric mixer.
3. Add eggs, syrup, pineapple (including juice), milk, vanilla and butter. Mix well.
4. Pour mixture into greased 8-by-8-inch baking dish. Top with marshmallows.
5. Bake at 350 degrees for 30 minutes.
