Campfire Recipes

If you’re camping in the backyard and can’t build a fire, use an oven at 350º F or a gas grill set to medium heat.

Scraps Stew

Gather

For each person . . .
1/4 pound ground beef
1 carrot, diced
2 slices onion
1 potato, sliced thin
1 tablespoon water
1 teaspoon seasoned salt

Go

1. Place meat in the center of a 16-inch square of heavy-duty foil. Top with vegetables, water and seasoning salt.
2. Fold the top and bottom edges of the foil together, leaving space inside for steam.
3. Roll up the sides of the foil to form a tight seal.
4. Cook over hot coals for 15 to 20 minutes. Juice from the meat will run clear when it’s done.
5. Add salt and pepper to taste. Eat directly from foil packet with a fork. (Be careful not to poke holes in the foil, or it will get messy.)

Sticky Pineapple Cake

Gather

For each person . . .
1 tablespoon butter, softened
1 tablespoon brown sugar
1 cake doughnut
1 maraschino cherry
1 pineapple ring

Go

1. Combine butter and sugar. Spread mixture on top of doughnut.
2. Stuff cherry in doughnut hole. Top with pineapple ring.
3. Place doughnut on a 12-inch square of heavy-duty foil. Fold up the top and bottom edge to form a tight seal.
4. Tightly roll up the sides of the foil.
5. Cook over hot coals for 5 minutes.
