Mimi Wilson

Mimi Wilson and Mary Beth Lagerborg are co-authors of the highly popular book Once-a-Month Cooking, which has been continuously in print since 1982 and has sold more than a half million copies. This work, it’s companion book Table Talk, and the authors’ organization, Once-a-Month Cooking, are all designed to help families connect around the dinner table, eat healthier, and practice hospitality. Mimi has co-authored two additional books with her prayer partner in Ecuador, Shelly Volkhardt, which examine God’s character and how it affects our daily lives. Mimi has lived and worked with women in Ecuador, Jordan, and Rwanda, as well as the United States. She and her husband, Cal, reside in Colorado. They have three children and seven grandchildren.
